  • Harvested in late August, in 15kg boxes and transported swiftly to the winery, the grapes are the fully destalked and lightly pressed.

    The vinification process, in low capacity stainless steel tanks, takes place at a controlled temperature with both varieties together for an extended period of maceration (around 30 days) and subject to rigorous organoleptic and analytical control.

    Following malolactic fermentation, the wine all gets placed in new 225 litre Allier oak barrels for an approximate 12 month maturing period before a further 12 months in the bottle.
